Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef, (85/15)
- Kosher salt
- 2 cloves of garlic, minced
1 can of Red Gold Petite Diced Tomatoes with Green Chilies 14.5 oz
- 1 pound shell pasta, not jumbo
- 2 cups shredded cheese, Mexican blend preferred
- Scallions, thinly sliced
Instructions
Step one
Preheat oven to 350° F.
Step two
Heat olive oil in a large pan over medium heat. Add the beef, cook until browned and crumbled. Season with kosher salt.
Step three
Add the garlic and cook for 1 minute. Add all the cans of Red Gold Tomatoes and simmer.
Step four
Meanwhile, bring a large pot of salted water to a boil and cook the pasta for 2 minutes less than package directions for al dente. Reserve a cup of pasta water and drain.
Step five
Add the pasta to the ground beef tomato mixture, along with a splash of pasta water and stir to combine.
Step six
Transfer the pasta and tomato mixture to a large baking dish and sprinkle the cheese over the top. Bake for 15 minutes and then broil for 3-5 minutes, until the cheese is golden and bubbly. Garnish with scallions.
