Pizza Cupcakes

These Pizza Cupcakes are a fun twist on pizza night. Fluffy dough is pressed into a muffin tin and layered with Red Gold Tomato Sauce, mozzarella, and mini turkey pepperoni or roasted veggies. Ingredients

  • 1 pound refrigerated thin pizza dough (or 1 sheet pre-rolled thin dough)
  • 1 can Red Gold Tomato Sauce 15 oz
  • 1 1/2 cups shredded mozzarella
  • 2 ounces mini turkey pepperoni (or roasted veggies like peppers, mushrooms, or broccoli)
  • 2 tablespoons grated Parmesan (optional)
  • 1 teaspoon Italian seasoning (optional)
  • Crushed red pepper (optional)
  • Oil or cooking spray, for the pan

Instructions

Step one

Heat the oven to 450°F and lightly grease a 12-cup muffin pan.

Step two

On a lightly floured surface, roll the dough to about 1/8 inch thick. Cut into 9 squares or rounds large enough to line the bottom and sides of each muffin cup. Press the dough into 9 muffin cups to make little bowls.

Step three

Spoon 1 to 1 1/2 tablespoons Red Gold Tomato Sauce into each cup. Add a few mini pepperoni or a spoonful of roasted veggies. Top with 2 to 3 tbsp mozzarella. Sprinkle Parmesan and Italian seasoning if using.

Step four

Bake 10 to 13 minutes until the cheese is melted and bubbly and the crust edges are lightly golden.

Step five

Cool 3 minutes, then loosen with a small offset spatula and serve warm. Add crushed red pepper if you like heat.
