Tuscan Chicken Gnocchi Soup

This creamy Tuscan chicken gnocchi soup is a comforting, restaurant-style meal made easy at home. Ingredients

  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 chicken breast, diced
  • Garlic powder, to taste
  • Onion powder, to taste
  • Italian seasoning, to taste
  • Paprika, to taste
  • Kosher salt, to taste
  • 1 teaspoon minced garlic
  • 1/4 cup chopped sun-dried tomatoes in oil
  • 1 tablespoon Red Gold Roasted Garlic Tomato Paste 6 oz
  • 1/3 cup Red Gold Crushed Tomatoes 15 oz
  • 3 cups chicken stock
  • 1 cup heavy cream
  • 3/4 package gnocchi
  • 1 cup chopped kale
  • 1/3 cup shredded parmesan
  • Freshly ground black pepper, to taste

Instructions

Step one

Heat the olive oil in a large pot over medium heat. Add onion and cook 2 minutes until slightly softened.

Step two

Season the chicken breast with garlic powder, onion powder, Italian seasoning, paprika, and salt.

Step three

Add the seasoned diced chicken, minced garlic, sun-dried tomatoes, and Red Gold Roasted Garlic Tomato Paste. Cook 5–7 minutes, until chicken is fully cooked.

Step four

Stir in the Red Gold Crushed Tomatoes, chicken broth, and heavy cream. Season to taste with salt, garlic powder, onion powder, and pepper. Bring to a boil.

Step five

Add the gnocchi and cook about 3 minutes, or until tender. Reduce heat to medium-low.

Step six

Add the kale and shredded parmesan; stir and simmer 10 minutes, until kale is tender and soup is creamy and flavorful.

Step seven

Serve hot with extra parmesan and crusty bread, if desired.
