Ingredients
- 150 ounces (9 1/3 pounds) Prepared waffle fries
- 1/2 pouch (53 ounces) LAND O LAKES® Ultimate Creamy White™ Cheese Sauce
- 110 ounces (6 pounds 14 ounces) Tyson® Low sodium pulled chicken
- 46 ounces (4 2/3 cups) Red Gold® Barbecue sauce
- If desired Red onion, diced
- 50 (150 ounces) Red Gold® PC salsa cups
Instructions
Step 1
Hold waffle fries warm until service.
Step 2
Heat Ultimate Creamy White™ Cheese Sauce using desired method.
CCP: Maintain hot food at 140°F or above
Step 3
Mix chicken and barbecue sauce in hotel pan. Cover; heat to 165°F. Hold hot until service.
CCP: Heat to 165°F for at least 15 seconds
CCP: Maintain hot food at 140°F or above
Step 4
To build nachos:
Place 3 ounces waffle fries (about 9) into desired container. Top with:
2-ounce spoodle BBQ chicken
1-ounce ladle cheese sauce
Red onion, if desired
1 PC salsa cup
