Ingredients
- 1½ pounds ground beef
- 1 medium yellow onion, diced
- 4 garlic cloves, minced
- 2 tablespoons taco seasoning
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- 1½ teaspoons chicken bouillon powder
- ½ teaspoon salt
2 cans Red Gold Mild Diced Tomatoes + Green Chilies 10 oz, undrained
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 3 cups chicken broth
- 1 (8-ounce) package cream cheese, softened and cubed
- ½ cup heavy cream
- 10 ounces (about 2½ cups) shredded sharp cheddar cheese, divided
- Lime wedges, for serving
- Tortilla strips, for servingng
- Sliced green onions, for serving
- Fresh cilantro leaves, for serving
Instructions
Step one
Cook ground beef and onion in a large pot or dutch oven over medium-high heat for 7–8 minutes, breaking beef apart as it cooks, until beef is browned and onion is tender. Carefully drain excess fat.
Step two
Add garlic, taco seasoning, cumin, smoked paprika, chicken bouillon powder, and salt. Cook, stirring constantly, for about 30 seconds or until fragrant.
Step three
Stir in Red Gold Mild Diced Tomatoes + Green Chilies with their juices, black beans, corn, and chicken broth. Bring soup to a gentle boil.
Step four
Reduce heat to medium-low and simmer uncovered for 15 minutes, stirring occasionally.
Step five
Reduce heat to low. Add cream cheese and stir until completely melted and smooth.
Step six
Stir in heavy cream. Gradually add 8 ounces (about 2 cups) cheddar cheese, stirring until melted and creamy. Do not allow soup to boil after adding cheese.
Step seven
Ladle soup into bowls and top with remaining cheddar cheese, lime wedges, tortilla strips, green onions, and cilantro.
