Roasted Eggplant Boat

Ingredients

  • 2 eggplants
  • 3 tbsp olive oil
  • 2 tsp salt
  • 1 can Tuttorosso Tomato Sauce Italian Style with Basil,Garlic & Olive Oil 28 oz
  • 12 slices mozzarella cheese
  • 2 tbsp fresh basil for garnish

Instructions

Step One

Cut eggplants in half and create criss cross lines on the eggplant. Drizzle with olive oil and sprinkle with salt. Bake eggplants for 20 minutes at 350 degrees.

Step Two

Once softened, create a shallow hole in the middle to hold the sauce. Add sauce and slices of fresh mozzarella and bake for 5-7 more minutes untill cheese is melted.

Step Three

Garnish with fresh basil and enjoy!
