Tater Tot Pizza Casserole

This Tater Tot Pizza Casserole is a weeknight friendly dinner that combines crispy potatoes, seasoned ground beef, and plenty of melted mozzarella. Ingredients

  • 4 cups frozen tater tots
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 pound ground beef
  • 2 cans Red Gold Canned Crushed Tomatoes 15 oz
  • 1 tablespoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups shredded mozzarella cheese
  • Chopped fresh parsley, for garnish

Instructions

Step one

Preheat the oven to 425°F.

Step two

Spread tater tots in an even layer in an 8 x 11 inch baking dish. Bake for 25 to 30 minutes, until lightly golden and starting to crisp.

Step three

Meanwhile, heat olive oil in a large skillet over medium high heat. Add onion and garlic and cook for 3 to 4 minutes, stirring often, until softened.

Step four

Add ground beef and cook, breaking it into small pieces, until browned and cooked through. Drain excess grease if needed.

Step five

Stir in Red Gold Crushed Tomatoes, Italian seasoning, salt, pepper, garlic powder, and onion powder. Simmer for 5 minutes to thicken slightly.

Step six

Remove tater tots from the oven. Using the bottom of a glass, gently press them down to form an even crust, pressing slightly up the sides.

Step seven

Spoon the beef and tomato mixture evenly over the crust. Top with mozzarella cheese.

Step eight

Return to the oven and bake for 15 minutes, until the cheese is melted and lightly browned. Garnish with parsley before serving.
