This simple and creamy dip combines the fresh flavors of garlic roasted tomatoes with a blend of three cheeses and is packed with protein.  It’s topped with pepperoni and fresh basil to satisfy your deepest pizza cravings, all while making a perfect and easy appetizer for game day!

Ingredients

  • 1 1/2 teaspoons unsalted butter
  • 2 to 4 garlic cloves, freshly minced
  • 1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz

  • 2 tablespoons Red Gold® Red Gold Roasted Garlic Tomato Paste 6 oz

  • 1 tablespoon dried oregano, plus more for garnish
  • 1 cup cottage cheese
  • 1 cup fresh chopped spinach
  • 1/2 cup plus 1/4 cup shredded mozzarella cheese, divided
  • 1/2 cup shredded provolone cheese
  • turkey pepperoni slices, for topping
  • fresh basil, for garnish
  • grated parmesan cheese, for garnish
  • crushed red pepper flakes, for garnish

Instructions

Step one

Preheat oven to 425°F.

Step two

Heat butter in a cast iron skillet or oven-safe pan over medium heat until melted.  Turn heat to low and stir in garlic, cooking for 2-3 minutes or until fragrant.

Step three

Add Red Gold Original Diced Tomatoes + Green Chilies, Red Gold Roasted Garlic Tomato Paste, and oregano.  Mix and set aside.

Step four

In a bowl, mix cottage cheese, spinach, mozzarella, and provolone together and add to skillet to combine with tomato mixture.  Spread evenly across the pan.

Step five

Sprinkle with remaining 1/4 cup mozzarella and top with pepperoni.

Step six

Bake for 10-12 minutes until cheese melts.  Broil for 2-3 minutes until golden brown and bubbly.

Step seven

Garnish with fresh basil, grated parmesan and crushed red pepper.
