Ingredients
- 8 slices of 1/2 inch thick French bread
- 1/4 cup plus 2 tablespoons olive oil, divided
1 can Red Gold® Canned Petite Diced Tomatoes 14.5 oz, drained
- 5 basil leaves, chopped, save a bit for garnish
- 1/2 red onion, diced
- 2 tablespoons balsamic vinegar
- kosher salt and freshly ground pepper, to taste
- 3 ripe smashed avocados
Instructions
Step one
Preheat oven to broiler setting. Place slices of bread on a baking sheet and drizzle with the 2 tablespoons of olive oil. Broil slices in the oven for about 1-2 minutes on each side or until golden brown. Remove from the oven and set aside.
Step two
In a medium bowl, combine Red Gold Petite Diced Tomatoes, basil, red onion, 1/4 cup olive oil, and balsamic vinegar. Season with salt and pepper to taste.
Step three
Spread smashed avocado onto each slice of toast, then generously spoon the bruschetta on top. Garnish with fresh basil (or parsley) and serve immediately.
