Mexican Pizza

A meatless pizza topped with black beans, Petite Diced Tomatoes with Green Chilies, red onion, jalapeno and cheese that is ready in under 30 minutes. Recipe makes 2 pizzas, but can easily be divided in half for one.

Ingredients

  • 2 (12 inch) pizza crusts, or your favorite pizza dough recipe, or store bought dough
  • 1 (15 ounce) can Red Gold® Chili Ready Crushed Tomatoes 15 oz
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes with Green Chilies 14.5 oz, drained well

  • 1 cup red onion, thinly sliced
  • 2 jalapenos, seeds removed and sliced thin
  • 1 cup cliantro
  • 2 cups pepper jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 4 ounces sour cream, about a 1/2 cup
  • hot sauce, your favorite brand

Instructions

Step one

Preheat oven to 475º F

Step two

Place pizza dough or crusts on baking sheets or pizza stone

Step three

Spread half of the the crushed tomatoes over each crust, leaving a half inch border. Evenly divide the pizza toppings over the sauce on each pizza. Place in preheated oven and bake 10-15 minutes, or until cheese is golden brown and bubbly. You can bake both at once or one at a time. Depending on your oven, you may need to rotate pizzas at 5 minutes for even baking.

Step four

Remove from oven and let cool for 2-3 minutes, then garnish with sour cream and hot sauce.
