This is a super easy, quick, and favorable open face sandwich that the whole family will love. Great way to use up your leftover turkey.
Ingredients
- 2 cups cooked turkey, cubbed
- 1/3 cup finely chopped celery
- 3 green onions, chopped
1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Garlic & Olive Oil 14.5 oz, drained
- 1/2 cup light mayonnaise
- 4 whole wheat English muffins, split and toasted
- 1 cup (4 ounces) shredded cheddar cheese
Instructions
Step one
Combine turkey, celery, green onions and petite diced tomatoes. Stir in mayonnaise to bind the mixture together. Cover with plastic wrap and refrigerate until ready to use.
Step two
Preheat broiler to High.
Step three
Arrange English muffins on baking sheet. Top with turkey mixture and cheese. Broil a few inches from source of heat for 3 to 4 minutes or until hot and bubbling.
