Cheesy Pizza Soup

Italian sausage, pepperoni, mushrooms, tomato and cheese – all of your favorite pizza toppings in a warm hearty soup that is perfect for tailgates!

Ingredients

  • 1/2 pound Italian sausage
  • 1 1/4 cups diced fresh mushrooms
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup water
  • 1 can Redpack® Canned Crushed Tomato in Puree 28 oz

  • 1 can Redpack Canned Petite Diced Tomatoes 28 oz

  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup sliced pepperoni, chopped
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese, for garnish

Instructions

Step one

In a large saucepan, sauté sausage, mushrooms, onion and garlic for 2 to 3 minutes or until sausage is browned. Add water, crushed tomatoes, basil, oregano, diced tomatoes, pepperoni, and Italian seasoning. Bring to boil. Reduce heat, cover and simmer for 20 minutes, stirring occasionally.

Step two

Before serving, stir in Parmesan cheese and garnish with mozzarella cheese.
