Smoky Chipotle Sauce for Meatballs

Bold and smoky with a spicy kick—this rich sauce blends chipotle, ancho chili, lime, and Red Gold Crushed Tomatoes for the perfect meatball companion.

Ingredients

  • 1 cup vegetable oil
  • 2 2/3 tablespoons jalapeno pepper, grated
  • 1 cup onion, grated
  • 1/2 cup garlic paste
  • 1 cup chipotle in adobo puree
  • 1/4 cup ancho chili puree
  • 1 tablespoon cumin
  • 1 tablespoon Mexican oregano
  • 3 tablespoons salt
  • fresh lime juice, from 6 limes
  • 1/2 cup dark brown sugar, packed
  • 1 tablespoon Kitchen Bouquet
  • 2 cups Red Gold Crushed Ground Tomatoes

Instructions

Step one

Heat oil in a sauce pot over medium heat. Add the grated jalapeno pepper and onion, and cook together on medium heat for about 5 minutes until onions are soft. Add in the garlic paste. Cook an additional 1 minute.

Step two

Add the chipotle in adobo puree, ancho chili puree, cumin, oregano, salt, lime juice and brown sugar. Cook for 1 minute. Add kitchen bouquet and Red Gold Crushed Ground Tomatoes. Bring to a simmer and cook for 10 minutes. Add the meatballs.

Step three

Simmer meatballs for 10 minutes until hot. Serve with warm flour tortillas or steamed rice.
