Ingredients
- 2 lbs. cream cheese, softened
- 2 cup Nutritionally Enhanced BBQ Sauce
- 2 cup shredded cheddar cheese
- 1 cup grated parmesan cheese
- 1 cup green onions, sliced, green and white parts
- 2 cup shallots, fine chop
- 12 slices bacon, cut into ½” pieces, cooked crisp, drippings reserved
- 2 teaspoon salt
- 1 teaspoon ground black peppe
Instructions
Step 1
Preheat oven to 425°F (if serving has a hot dip)
Step 2
In the medium skillet cook bacon until crispy and fat is rendered. Pour off drippings and reserve. Drain bacon on paper towel.
Step 3
In the same pan as the bacon was cooked in add ¼ cup of the reserved bacon drippings and the finely chopped shallots. Cook for 3-5 minutes until shallots are translucent and tender. Remove from heat.
Step 4
In a large mixing bowl combine softened cream cheese, Red Gold BBQ Sauce, shredded cheddar cheese, Parmesan cheese, sliced scallions, crumbled bacon and cooked shallots.
Step 5
Season with salt and black pepper. Mix well using a rubber spatula to combine.
Step 6
Preheat oven to 425°F (if serving has a hot dip)
If serving hot: portion into an ovenproof baking dish and bake for 10-15 minutes until hot and bubbly. Remove from oven and serve.
If serving cold: transfer into appetizer sized ramekins, cover with plastic and refrigerate until ready to serve.
