Ingredients

1 1/2 teaspoons unsalted butter2 to 4 garlic cloves, freshly minced1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz2 tablespoons Red Gold® Roasted Garlic Tomato Paste 6 oz1 tablespoon dried oregano, plus more for garnish1 cup cottage cheese1 cup fresh chopped spinach1/2 cup plus 1/4 cup shredded mozzarella cheese, divided1/2 cup shredded provolone cheeseturkey pepperoni slices, for toppingfresh basil, for garnishgrated parmesan cheese, for garnishcrushed red pepper flakes, for garnish

Instructions

  • Preheat oven to 425°F.
  • Heat butter in a cast iron skillet or oven-safe pan over medium heat until melted.  Turn heat to low and stir in garlic, cooking for 2-3 minutes or until fragrant.
  • Add Red Gold Original Diced Tomatoes + Green Chilies, Red Gold Roasted Garlic Tomato Paste, and oregano.  Mix and set aside.
  • In a bowl, mix cottage cheese, spinach, mozzarella, and provolone together and add to skillet to combine with tomato mixture.  Spread evenly across the pan.
  • Sprinkle with remaining 1/4 cup mozzarella and top with pepperoni.
  • Bake for 10-12 minutes until cheese melts.  Broil for 2-3 minutes until golden brown and bubbly.
  • Garnish with fresh basil, grated parmesan and crushed red pepper.
